Corn season! It’s one of the best seasons! Besides grilled corn on the cobΒ (elotes), this bright corn salad is my favorite way to enjoy fresh corn. This version is almost like elotes en vaso but with the addition of tomato and green onions. And minus the mayo. But the sweet corn, sour lime, spicy serrano … MAN! I could eat it all day.

Serve corn salsa with tortilla chips or Fritos, or do like I do and just eat it with a big spoon.Β Also try it on top of fish tacos.

Corn Salad

Ingredients

Scale
  • 2 ears sweet corn
  • 1 teaspoon oil
  • 1 serrano pepper
  • 2 green onions
  • 1 Roma tomato
  • 1 clove garlic, minced
  • 1 tablespoons lime juice
  • 2 tablespoons minced cilantro
  • 1 teaspoon salt
  • Optional: 1 cup rinsed and drained black or kidney beans
  • Optional: 1/2 cup cotija cheese

Instructions

  1. Shuck the corn and rub with the oil. Sear on all sides in a hot skillet (or throw them on the grill for a couple of minutes). Set aside.
  2. Blister the serrano and the green onions in the same skillet (or on a grill).
  3. Cut the kernels from the cobs. Dice the serrano, the green onions and the tomato.
  4. Combine all these in a large bowl and add remaining ingredients. Stir to combine. Serve right away, slightly warm, or refrigerate to chill. Best served within 48 hours.

    I love (LOVE) corn salad, yet every summer I forget about it. Thanks for the reminder and this version sounds extra good! Also, thanks for the good tip on “grilling” the corn; I never thought to do it that way . . . and it’s too damn hot in Austin (be glad you’re in LA!) to do anything outside. XO

    Would frozen corn work?

      It would, but you wouldn’t need to roast it first. Just defrost and combine with everything else. Hope you try it!

    So, Hilah
    I made this today and oh my I am so surprised at how such simple ingredients come together and create such a superb taste. And you absolutely cannot have this without lime juice, wow how delicious fresh lime juice is in there! Hubby said its’ runny nose hot, but he loved it too.
    PS your video came on while I was playing scrabble on my ipad, and I usually wait the allotted seconds so that I can exit the commercial, but I saw it was you and thats’ how I now have your corn salad recipe, and I am making it for a pig roast I’m going to next Saturday, so thank you…once again πŸ™‚ (made and loved your brisquet also)
