6. ounces dry soba noodles (usually 2 bundles)
5–6 ounces bok choy (1 small bunch)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1–2 teaspoons minced jalapeno (optional)
Garnish: sesame seeds, green onions
Put on a large pot of water to boil. Get a bowl full of ice water ready.
Trim bok choy and slice if you like. It’s prettier kept whole but harder to eat 😉
Add soba to boiling water and set timer for 3 minutes. Taste for tenderness. When noodles are almost cooked, add bok choy and let cook another 30-45 seconds until bok choy is blanched.
Drain. Pour into ice water bowl and mix gently to cool and shock. Drain well again.
In a large bowl combine soy sauce through remaining ingredients. Mix gently. Garnish with sesame seeds or green onions.
*If your Bok Choy is a little spicy or bitter, add a pinch of sugar to the dressing
