Manila Wafers
- 1/4 pound butter (1 stick)
- 1 1/8 cup sugar
- 1 egg
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/4 cups flour
- 1 teaspoon vanilla
- Preheat the oven to 400 degrees F.
- Cream the butter with the sugar.
- Add the egg and vanilla and combine.
- Add the dry ingredients and combine.
- Grease a cookie sheet (better yet, slap some parchment paper down.)
- Drop the dough by teaspoon-fulls, 1 1/2″ apart (on an 11×17″ pan I fit 20 cookies)
- Bake for 7 or 8 minutes and watch carefully. “When they start to brown, they brown.”
