  • Vegan Bean Filling
  • 1 cup cooked pinto or black beans
  • 1 cup corn
  • 1/2 cup diced tomato
  • 1 jalapeno, minced
  • 1 tablespoon oil
  • 1 teaspoon oregano
  • Salt to taste (depends on your beans)

Instructions

  1. Drain liquid from beans and saute with corn, tomato, and jalapeno in the oil for five minutes, mashing the beans slightly.
  2. Add oregano and salt to your liking.
