Gingerbread Muffins

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup molasses
  • 4 eggs
  • 4 cups flour
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1 cup dried currants (optional, but Grandma always put them in)
  • 1 cup nuts (optional)

Instructions

  1. Cream butter, sugar, molasses until light. Mix in eggs and buttermilk thoroughly.
  2. Whisk together dry ingredients and stir into wet mixture.
  3. Add currants and/or nuts.
  4. Bake now or cover and refrigerate until ready to cook (up to one week).
  5. When ready to bake, preheat oven to 325ºF and grease muffin tins.
  6. Scoop batter into tins, filling half-way. Bake 25 minutes until a toothpick inserted in the center comes out clean.
