  • 2 cups whole wheat flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 1/2 cup oil (canola, safflower, vegetable)
  • 2 eggs
  • 1 cup pumpkin puree

Instructions

  1. Set oven to 400ºF and grease or line 12 muffin cups
  2. Whisk flour, sugar, baking powder and cinnamon together in a large bowl.
  3. Mix milk, oil, and eggs together in a smaller container.
  4. Add wet to dry and then add pumpkin. Mix quickly until everything is wet.
  5. Fill muffin cups about 3/4 full
  6. Bake 15 minutes or until a a toothpick inserted into a muffin comes out clean.
