Hey Hilah, thanks for answering! I didn’t mean to call you out, there. I learned how to make redbeans and rice from my first MIL who grew up barefoot and poor in Mississippi in the 40’s and her people were -might as well have been- cajun. She was the one who instilled in me to never use kidney beans. I buy the store brand small red beans at HEB. Not all HEB’s carry them but most do. I always thought red beans were like field beans, i.e. the poor people could forage for them, to have food to eat. Now that I think about that is probably a mis-perception. But I had no idea they were the Authentic Caribbean bean to use. Thanks for that cool tidbit!
