Leftover Turkey Recipes
Picture this: it’s three days past Thanksgiving and you still have a ton of leftover turkey. Even worse, you only have a little turkey leftover — hardly enough to make a meal from . Do not fret! There are loads of leftover turkey recipes and here are some of them!
Chicken Turkey Pot Pie
Don’t be fooled by the name. Chicken pot pie works just as well with turkey.
Chicken Turkey Enchiladas
Same thing here, homies. Just shred that leftover turkey up and mix with some cheese to fill these enchiladas with tomatillo sauce.
Burritos are like the grab bags of the dining table. Cram whatever you like inside there: leftover turkey, mashed potatoes, stuffing, green beans, pie — don’t pit pie in there. But anything else, go ahead! Wrap it up, bake it to warm through and voilá. Practically a whole new thing. And while we’re on that note …
These are just deep-fried burritos (which I’m not sure I should be recommending at this time of year, but on the other hand, isn’t excess what this time of year is celebrated for?)
Add a quick and easy homemade barbecue sauce to that shredded bird and you’ve got the makings for some badass BBQ turkey sandwiches. Bonus points if you serve them on leftover dinner rolls!
BLT Sandwich with Turkey
This was my family’s traditional day after Thanksgiving meal: BLT with turkey and avocado. Try this twist on a BLT with fried beets and bacon. Add sliced turkey and you’ve got it made.
Quesadillas may be obvious, but that’s part of my job.
Gorditas may be less obvious, and only a little more work.
Chicken Turkey Tortilla Soup
Who doesn’t love soup?! Who doesn’t love soup that can be on the table in 20 minutes?! Not this gal! I mean, I do love it. I mean, me.
Stuffed chiles are a fantastic way to use all kinds of leftovers. Shredded turkey mixed with cheese and some leftover cornbread dressing, gently tucked into a roasted poblano, then fried and topped with a simple salsa? Sign me up. I’ll take two.
More leftover stuffing or dressing? Try adding some to this veggie burger recipe along with some chopped up green beans or mashed potatoes for a full vegetarian Thanksgiving meal-in-one!
And leftover turkey for breakfast can and will also be done: Chilaquiles
To add leftover turkey or chicken, just shred or chop and heat in the salsa before pouring over crispy chips and topping with cheese and/or a fried egg. Easy peasy.
And just like that, all your Thanksgiving leftovers are gone. You’re welcome.
